i’m back from brazil and craving….salad? you’re probably wondering, when does the queen of carbs EVER crave salad?! what did south america do to our favourite italian?! well let me tell you, i’m craving a salad and a detox for good reason: the brazilian diet consists of entirely meat and carbs. oh, and cheese. the only other place i’ve ever eaten that much cheese has been in italy. imagine my surprise when i discovered that brazilians love their italian food – pizza, pasta, bread and bubbling cheese on everythinggggg. all the restaurant options offer either buffet style churrasqueira – which is all you can eat plates of sizzling meat and sides of potatoes and rice, or italian food. snacks are things like deep fried sardines at the huts on the beach, or a wide variety of cheese or meat filled pastries. i also drank what feels like every last drop of beer in brazil.
the food was really was delicious: salty, juicy meats, puffy cheese breads, flaky pastry crusts, and i did have the very best charcoal chicken of my life at a random sketchy place by the beach and mango juice that’s still on my mind; but after 10 days of very little veggies and a big bloated belly (at least it’s a tanned bloated belly), i’m craving cold, crunchy salads, green juices, and if i don’t taste a drop of beer until the middle of summer, it will be quite alright with me.
and that’s how this salad came to be – i was sitting in a coffee shop trying to work and thinking about what i wanted to eat for lunch and started dreaming of things that were crisp and bitter and juicy and refreshing, so i packed up my laptop and beelined for the grocery store. radicchio, red onion and granny smith apple covered all of my bases, topped with aged balderson (i might have eaten a lot of cheese in brazil but that’s the only thing i’m not tired of yet), topped crunchy sunflower seeds and a honey mustard walnut truffle oil dressing this salad was exactly what i was needing. if only this craving for salads would last, i wouldn’t have to worry about working out so much, but alas, i’m sure my hunger for pasta will return soon. until then – enjoy being healthy with me!
apple & radicchio salad with truffle oil
1 head radicchio, sliced into 1 inch pieces
1/2 granny smith apple, thinly sliced
1/4 of a small red onion, very thinly sliced
1 handful toasted salted sunflower seeds
1/4 cup shaved aged white balderson
1 tablespoon dijon mustard
1 tablespoon honey
1/2 tablespoon walnut oil
1/2 tablespoon white balsamic vinegar
pinch of black pepper
white truffle oil for serving
toss radicchio, apple, onion, sunflower seeds and balderson in a large bowl. combine mustard, honey, walnut oil, vinegar and pepper, and dress the salad. divide among bowls and lightly drizzle with truffle oil and a pinch of sea salt.
