this week flew by, surprisingly, and i’m pretty happy that friday is here. it was cold af and since we’re actually in march now, now i’m just getting annoyed. BUT next week is calling for 7, 9, 13 and 10 degrees all in a row!! i’m hoping and praying and crossing my fingers and toes that it stays, because in like a lion, out like a lamb, right?

i’m also very excited for this weekend since i’ll be hosting the first installment of my dinner series! another one of my new year’s resolutions was to start a dinner series. i’ve always loved entertaining, and i realized that i don’t always need an occasion or a holiday to host a proper dinner party. so, once a month i’ll be hosting 4 guests for either brunch or dinner. i’ll be documenting the recipes as well as diy table settings and take away gifts in a new series on here called mangia! keep an eye out!

also, mr. renato bialetti, the maker of my beloved coffee makers (i have 3 and my nona has about 30 lol), passed away at the age of 93. his ashes were placed in a giant version of the moka pot, like a boss. RIP <3

make // chocolate chunk almond butter coconut cookies. yup, make em tonight – recipe after the jump because i love you 🙂
chocolate chip almond butter coconut cookies
*recipe adapted from food52
1/2 cup unsalted butter, softened
3/4 cup almond butter
3/4 cup brown sugar sugar
1/4 cup white sugar
1 teaspoon pure vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon kosher salt
1/2 cup unsweetened, coconut flakes (or shredded if that’s what you can find)
2 ounces dark chocolate, coarsely chopped (or 1/2 cup dark chocolate chips)
•heat oven to 350° and line 2 baking sheets with parchment paper.
•cream butter, almond butter, and sugars until smooth. add egg and vanilla, then beat until well incorporated. in a medium bowl, whisk together flour, baking soda, and salt. add to the creamed butters and sugars and mix on a low speed until just combined. fold in the chocolate and coconut.
•use about a tablespoon of dough and drop it on to the prepared sheet. bake until lightly golden around the edges but still quite soft in the center, 12 to 14 minutes.
•remove from oven and cook for about 5 minutes on the baking sheet and then transfer to a wire rack. try not to eat them all before they cool off completely 🙂
