here’s just a quick weeknight dinner! i get asked a lot how i have the energy or time to cook when i’m getting home late from work, but these are the kinds of things i do on the weekdays. this took me about 15 minutes from start to finish – the most time consuming is just chopping everything up since i don’t have a food processor. it’s fresh and healthy, and can be more filling if you make some quinoa or brown rice on the side.
i used lots of fresh herbs from my little herb garden that i’m growing on the balcony. they are the best smelling, most precious little things, some lime juice and salt and pepper – all easy ingredients!
Pan Fried Tilapia with Mango Salsa
*salsa makes enough for 2 people, but it can easily be doubled
1/2 mango, diced
1/2 avocado, diced
1/4 red pepper, diced
1/4 red onion, diced
1/2 jalepeno seeded and cut very finely
juice of 1/2 lime
fresh ground salt and pepper to taste
1 fillet of tilapia or fish of choice (chicken or pork would be just as tasty, tilapia is just the quickest to cook)
1. Add all diced ingredients in a bowl and toss to coat. Let marinate while you cook the fish
2. Heat a tablespoon of your choice of oil in a pan (always cast iron always always) until shimmering. Add fish and desired spices. I use this chipotle mango spice that is amazing.
3. When fish is cooked though, about 3-4 minutes per side, add to plate and spoon salsa over top.
seriously! that’s it! now relax and enjoy! and take a look at this gorgeous succulent garden my guy made for me! i think we’re going to put it up on the wall on the balcony once the roots grow in a bit. so adorable!
