V DAY. this holiday is *actually* the worst holiday ever. completely and totally fabricated in order to put a market value on love and make people throw their money at corporations. it puts overbearing pressure on people to have love, it makes the people who are alone feel even more lonely and it reinforces gender roles. i totally believe life can be like a cheesy rom-com and that when you’re with someone you love, every day should be like valentines.
i’m not a fan of roses (i’d MUCH rather these bouquets of fruits and veggies instead), or chocolate, BUT i am a complete and total sucker for any excuse to make cookies. i hung around for most of the day, seeing everyone else’s obligatory valentine’s day posts of their roses, candy, chocolate etc, and started feeling a unstoppable craving for cookies. just because i don’t like in valentines day, doesn’t mean i’m going to boycott an excuse to eat really adorable cookies.

small batch sugar cookies + white chocolate buttercream
*makes about 9 cookies
1/4 cup unsalted butter at room temperature
1/3 cup granulated sugar
1 egg yolk from a large egg
1 tablespoon full fat sour cream or greek yogurt
1/2 tablespoon vanilla extract
1 cup all-purpose flour + 1 tablespoon
1/8 teaspoon salt
1/8 teaspoon baking powder
1/4 cup unsalted butter at room temp
1/2 cup + 2 tablespoons sifted icing sugar
1 tablespoon heavy cream
1/4 teaspoon vanilla extract
1 pinch salt
1/4 cup melted white chocolate
to make the cookies: preheat the oven to 350. cream butter and sugar until very pale and fluffy, about 5 minutes, then incorporate egg yolk and vanilla, mixing until combined, then add greek yogurt or or sour cream, mixing again until fully combined. add flour, salt, baking powder and mix on low until the dough starts to come together – it will be sticky and this is ok.
remove from the bowl and form into a ball, placing between two sheets of parchment paper. roll out until about 1/8th of an inch thick. cut into hearts, and chill in freezer for about 3-5 minutes, just until firmed up. bake in preheated oven for 6 minutes, then rotate pan and bake for another 3. edges should just be turning a very pale golden. let cool on a wire rack, re-roll scraps and repeat.
while cookies are cooling, make the frosting: whisk butter and icing sugar together until very pale, about 5 minutes. with the mixer on medium speed, add vanilla, salt and heavy cream, then add in the chocolate and beat for another 2 minutes. frosting should be light and fluffy. divide into two bowls and add food colouring if using.
ice the cookies with a spoon or butter knife & give to all of your friends! (or eat them all to yourself, there’s no judgement here). 💘
